Warming Vegetable Soup
This is my go-to soup recipe. A great option if you’re short of time during the day and you need something you can prepare beforehand. The diverse mix of veg in this recipe makes it super healthy, and the herbs and spices makes it delicious. A classic winter warmer!

Ingredients
- 1 Sweet Potato
- 1 Small Butternut Squash
- 2 Carrots
- 1 Parsnip
- 1 Leek
- 1 Vegetable Stock Cube
Directions
Peel and roughly chop all veg and add to a large saucepan. Add the stock cube and herbs and spices. I add salt and pepper, 1 tsp cumin, 2tsp paprika, 2 tsp mixed herbs, 1 tsp curry powder and a splash of red wine vinegar and Worcestershire sauce- I prefer a more spiced flavour, but if you’re not so keen halve these amounts. With the seasonings, its better to add conservatively to start, then add more once blended if necessary.
Add enough water to cover veg and simmer with the lid on until all veg is cooked through. Once cooked, blend with a hand blender until smooth. At this point, have a taste and see if seasoning needs to be corrected.
Serve with thickly buttered crusty bread, yum!
